Steam Tofu with Dry Shrimp Paste


Tofu? Tofu? Tofu? It’s plain and tasteless. What do you want to add to your tasteless tofu?
How did they make the dry shrimp? They sun dry it, just the same like you hang your clothes out in the sun. Except for this, they lay it on the floor.
Dry shrimp paste here is called “heh bee”. The dry shrimp here will be minced and will look like clogs of cotton.
Ingredient
1 pack soft tofu, 1 shallot
2 tablespoon dried shrimp
1 tablespoon soy sauce
½ teaspoon sesame oil
1 dash pepper
1 teaspoon salt & sugar
2 birds eye chili (optional if you like spicy)
Mortal pestle or blender or food processor
Preparation for Tofu (10minutes)
Steam tofu in a plate adding the following
1 tablespoon soy sauce
½ teaspoon sesame oil
Preparation for Dry shrimp paste
Use mortal & pestle to mince the dry shrimp. Well if you don’t have one, you could use a blender or food processor. Use low speed and count to 3 for 3 times.
Add 1 teaspoon sugar & salt to dry shrimp
Cut shallot to small cubes
Cut 2 birds eye chili
To Cook
Heat some oil, wait till it heats abit about 10 seconds
Add in the shallot fry for 10 seconds
Add in the dry shrimp paste
STIR & FRY for about 5- 10 minutes
Add birds eye chili & 1 dash pepper
Add the cooked shrimp paste on the tofu
Ready to serve

Why we have to STIR & FRY. Dry shrimp can be easily cooked, you will be able to smell the aromatic shrimp while cooking this. But you have to be careful and don’t let it turn too dark. Once it turns too dark it will start to bitter. It will spoil the whole dish.
So keep an eye on it at medium heat while look and stir.
