French Beans Anchovies






French Beans Anchovies
Ingredient
1 pack French beans (Or Kui Tau)
3 tablespoons of baby anchovies
4 cloves garlic
1 table spoon fish sauce

Prepare & Cook
Rinse baby anchovies and dry them
Cut French beans into sizes of about 3cm
Chopped garlic
Heat up oil, add in half chopped garlic,
Fry till golden brown, remove to plate
Add in anchovies, fry till abit crispy, remove to plate with garlic
Add in balance chopped garlic, fry for a few seconds
Add in the french beans
Fry for about 5-7 minutes
Add 1 tablespoon of fish sauce
Remove to plate
Garnish with fried garlic and anchovies
Ready to serve

Simple C and C (Cabbage Carrot)



This round we have big carrots. Previously we were using baby carrots which was rather hard to cut and design. So, I bought this normal size carrot. Cut whatever design you like, star, triangle, square, flower, rabbit? Figure it out yourself… create it yourself.


10 minutes dish
Ingredients
¼ cabbage, 1 carrot
2 dash garlic parsley powder
1 dash salt
Prepare and cook
Make your favorite design carrot
Heat 1 tablespoon oil
Add carrots, fry for 2 minutes,
Add 2 dash garlic parsley powder
Add cabbage, stir up for 3 minutes
1 dash salt

Ready to Serve

Salmon Rosemary Oven Bake



Instead of heating up the pan, stir frying on the wok, today I decided to make a clean cook. You must be wondering what and why is it clean cook, as for me it means I don’t have to clean the stove and the sides of the stove. Stir frying on the pan, the sizzling oil would be sizzling all over outside my pan as well. So I would have to clean up and wipe the stove and the sides of the stove. Washing the pan and the spatula.

So you can imagine how tired I am today after doing all the other house chores. So just make double foil on the oven pan, once its cooked, just remove the whole piece of aluminum foil. Wonderful?


Ingredients 
2 pieces salmon, 5cm each piece
6-8 baby carrots
1 spring onion
3 cloves garlic
Aluminium foil (cooking grade) at least 20cm x 15cm
3 tablespoon olive oil
Salt

Prepare and cook
Chop garlics to small cubes
Cut spring onions to 2-3cm
Put 3 tablespoon olive oil in bowl
Roll Fish in bowl both side
Sprinkle rosemary and dash of salt on both side of fish
Place fish on foil
Put in baby carrots
Add slice garlic on top of salmon
Pour in balance olive oil on top of fish
Bake in oven 220-230 Deg for about 20 minutes
Check on fish in oven in case it really burns
Garnish with spring onions
Ready to serve

Spicy Chicken Dry Chili


Rain, rain, go away, come again another day. Oh, It is raining, cooling day. So how about having a spicy dish. I guess today’s menu would be some hot and spicy chicken with dry chili.

If you are not a good spicy eater, after cooking the dry chili with chicken for about 2 minutes, you may remove the dry chili. Else you will have to contact the fire brigade to cool your mouth! Be careful on those dry chili. 

Ingredients
½ Chicken, 4 dried chili
4 shallots, 4 cloves garlic
3 tablespoon soy sauce, 1 tablespoon sugar
1 dash pepper, 1 tablespoon sesame oil
Prepare & cook
Marinate chicken with sesame oil for 1 hour
Add 1 dash pepper
Slice garlic and shallots
Fry shallots then garlic for 2 minutes
Add chicken fry for 10 -15 minutes
Add soy sauce, stir up and mix
Last 5 minutes add dry chili and mix
If it’s too spicy, remove the dry chili from the chicken
Ready to serve

Spinach Garlic Stir Fry



I'm popeye the sailorman. Peep! Peeep!! I'm popeye the sailorman. Peep! Peeep!! Where my spinach? 


Simplest of the simple. Well, its home cook food. Just heat some oil, pop in some garlic, add in the vegetable, sprinkle some salt, stir it up. That is all! It is delicious! 



Ingredients
A bunch of spinach
4-6 cloves of garlic
2 dash garlic powder
2 dash salt
Prepare and cook
Heat oil
Fry garlic until it starts to turn yellow
Add in spinach
Add 2 dash garlic powder
Add 2 dash salt
Serve

Pan Fry Cod wit Sautee Mushroom and Carrots

 Cooking fish without oil will usually makes the fish stick to your wok. This time, it is an exceptional case for me. I am cooking cod fish without adding any oil because the cod fish itself is very oily. So let’s cook with this natural fish oil. Once you start cooking, the oil will be flowing out. About another minute you will hear those sizzling sound, smells good?

If u like the raw crunchy carrots then you can fry them together with the mushroom. I like it more cooked carrots, so I am frying the carrots earlier then mushroom.




Ingredient
1 slice Cod Fish
8 pieces of button mushroom
Half a carrot

Prepare and cook
Heat pan for a minute, place in cod without oil
Remove the fish
Fry carrots and mushroom
Add dash of salt, garlic parshley powder
Add 3 tablespoon of water
Ready to serve

Fried Tofu Pok Snack

 Snack Time



Just bought a pack of fried tofu pok or u call it fried beancurd from store. It is snack time. So I just slice them or you could just cut them by using a siccors then fry them. Heat up your hot sizzling pan with oil. It will turn out just like small slices of baguette. You could have it plain with nothing or you could add some dipping sauce yourself.

Dipping sauce, you could use, anything you like from the following

1.     Ketchup
2.     Chilli sauce
3.     Lingam sauce
4.     Olive oil with vinegar
5.     Fish sauce mix with some chopped onions and lime
6.     Sprinkle some salt while it is still hot


Ready to serve.

Tau Eu Chicken – Black Soy Sauce Chicken


This dish has been a favorite to many, from young to old for many generations. Many people would never get bored with this dish for lunch and for dinner. If you use kampong chicken, you will have to boil for almost 2 hours else the meat would be too hard. If you use normal chicken, boil 1- 1.5 hours max else your chicken will be too soft. This delicious Tau Eu chicken may take some time to cook but you could just have this one dish with everything in it and need not cook another dish for the day. All in one pot.

While boiling the chicken, I was already thinking about the Tau Eu (Soy sauce) mixing up with my white rice! Absolutely delicious!

If you plan on adding more side dishes like the following:-
Potatoes – add in 30 minutes before serving,
Lettuce – add in 2 minutes before serving.
Boiled Eggs – 30minutes before serving.
Pick one? Pick all? Suit yourself.

Ingredients
½ kampong chicken (village farm chicken)
2 whole garlics unpeel
6 tablespoon light soy sauce
2 tablespoon thick black sauce
2 dash pepper
6 baby carrots
1 egg
1 spring onion

Prepare & Cook
Boil water. Cook egg. Full boil. Peel shell. Put aside.
Clean baby carrots
Wash chicken,
Fill pot with water about 1 inch above chicken
Parboil chicken 2 minutes, remove impurities
Add garlic, Add more water about 2 inches, boil 1hour
Add 6 tablespoon light soy sauce
2 tablespoon thick black sauce
2 dash pepper
Add carrots and egg
Boil low heat for another 30 - 45 minutes
Ready to serve
Add spring onions


Best served with white rice

Bacon Egg Sandwich

There are times we go to cafes for brunch, might probably cost MYR30 a plate. They would serve us two slices of bread, two bacon, scramble eggs, mushrooms and two big tablespoons of bake beans. Sounds delicious? Yeah, I would take everything except bake beans. It is just not my favorite, I would probably take 1 or 2 out of a spoonful of beans. Let’s just say, 5 items means MYR6 for each, there goes the 6 for the bake beans. Since I have just bought some bacons from the supermarket, it would be our simple brunch without bake beans. Yummy!




Ingredients
4 slices bread
4 eggs
4 slices bacon
Prepare and cook
Put bread on pan heat it for about 2 minutes
Fry Bacon without oil -2 minutes
Scramble eggs x 2
Ready to serve

You could also add a slice of butter on the pan before you heat your bread to make it smell better, but not for me because I would feel a little bit greasy on my fingers. So it is just personal preference. I like it dry.
